Large Black

Large Black

The Large Black pig is a British breed of domestic pig. It is the only British pig that is entirely black. It was created in the last years of the nineteenth century by merging the black pig populations of Devon and Cornwall in the south-west with those of Essex, Suffolk and Kent in the south-east.

The meat from the Large Black is known for its lean quality and flavour without an excess of back fat.

Berkshire Pig

Berkshire Pigs

The Berkshire is thought to have originated in Reading, the county seat of Berkshire. It is one of the oldest breeds of pigs in England. It is a rare breed in the United Kingdom.

Berkshire pork, prized for juiciness, flavour, and tenderness, is pink-hued and heavily marbled. Its high fat content makes it suitable for long cooking and high-temperature cooking.  The meat also has a slightly higher pH, according to food science professor Kenneth Prusa of Iowa State University. Increased pH makes the meat darker, firmer, and more flavourful. High pH is a greater determinant than fat content in the meat’s overall flavour characteristics.

Mangalica

Mangalitza Pigs

Hungarian breed of domestic pig. It was developed in the mid-19th century by crossbreeding Hungarian breeds from Nagyszalonta and Bakony with the European wild boar and the Serbian Šumadija breed. The Mangalica pig grows a thick, curly coat of hair. The only other pig breed noted for having a long coat is the extinct Lincolnshire Curly Coat pig of England.

The primary product made from this pig is sausage, the fresh meat tastes strong and juicy.

Iberico

Iberico

Iberian Pork is a 100% pure breed. In contrary to our ‘native’ pig, the pink one, the Iberian Pork has a pure and authentic taste. It’s the power of nature.

The breeding of the Iberian pigs is controlled by diverse organisations and is set by Spanish law.

As a result of their life outside, as well as feeding habits, the meat of the Iberian Pork has some special qualities. One of them is that the animals have not been exposed to factors such as stress. Another one is the intramuscular structure of fat. Thanks to the free-living space, the pigs have had a lot of exercise, which is the reason of the intramuscular structure. This fat gives the meat the authentic and magnificent taste.
