Pork

Gloucestershire Old Spot Pork

Our Reputation has been largely built around our Gloucester Old Spot pigs which bare reared in the extensive woodlands of the Marks Hall Estate where we farm.
The Gloucestershire old spot pig is a large lop eared, mainly white pig with at least one black spot.

It is now officially recognised as a rare breed, and can certainly be dated back to the early 1900’s if not earlier.
Unlike the commercial hybrid pig, the Gloucester’s are fed a far less intensive ration and fatten at a far slower rate. It is this rearing that encourages the development of the tender, succulent and fine grained meat full of flavour that these pigs are renowned for.

We do not use additives or growth promoters and these pigs are reared in the traditional way in totally stress free environment.

Free Range Pork

Blythburgh free range pork comes exclusively from the Blythburgh herd of free range pigs that are reared on the picturesque north Suffolk coast.
These pigs are more than free range, because they are reared totally out of doors and allowed to roam free in their spacious paddocks in a stress free environment. They are also allowed to grow naturally, with no hormone or antibiotic growth promoters used.
These pigs also benefit from being reared for four weeks longer than conventionally reared pigs to allow the delicious flavour and mouth watering succulence to develop fully.
The farmer of this herd is Jimmy Butler and he has just been voted as British Pig Farmer 2005 by “Farmers Weekly” magazine which is just reward for the first class environment in which these pigs are reared.

Bacon and Gammon/Ham

We offer the very best in traditional British bacon, it is dry cured rind on and available in back or streaky , smoked or unsmoked . In addition we produce our renowned Gloucester Black Bacon which has been marinated in real ale and molasses for a month before being dry cured for a further two weeks .
Our Gammons which like our bacon is under the RSPCA Freedom Food banner is available in Smoked and Unsmoked .
We produce a variety of Hams, ranging from smoked ,unsmoked, honey roast and honey and mustard.

Sausages

Our old spot sausages are quite simply amazing, full of flavour and taste of what a real sausage should . We produce two varieties, a traditional pure pork sausage from our old spot pigs and our excellent pork and herb sausages made with fresh herbs.
